Funnel Cake

My son had tried a funnel cake for the first time, a few weeks ago.  He evidentally loved it because he had asked me a few times if I knew how to make them. Since today is the first day of summer vacation -- I decided that today would be the day.

It was the first and last time I will make funnel cakes.

Funnel Cakes

        3 eggs
        1/4 cup sugar
        2 cups milk
        3 1/3 cups flour
        1/2 teaspoon salt
        2 teaspoons baking powder
        vegetable oil, for frying(I used Canola and it was fine)

Directions

    Beat eggs and sugar together and then add the milk slowly--beat. Add the dry ingredients and beat until smooth and creamy. Pour batter into a funnel and at the same time, use your finger to plug the hole. In a large cast iron pot, add 2 inches of oil to the bottom. When the oil becomes hot, move your hand over the pot and slowly release your finger so the batter can start cooking. Move the funnel around to make designs. Brown on both sides -- then immediately remove and drain extremely well. Top with brown sugar, honey, cinnamon sugar, or powdered sugar as a topping. BE CAREFUL AND DO NOT GET BURNED!

Mother's Day Gifts

Notebooks and Flower Pens




Each Mother's Day my 3 nieces and my sister in-law exchange inexpensive gifts with each other.  The girls look forward to seeing what I have made them.  This year I personalized some notebooks I purchased at the Dollar $tore and blinged up some ink pens (also purchased at the $ store).

I used sticker letters and cardstock scraps to personalized the notebooks.

The pens I have been making for years. They are easy enough to make with children. For a few years I have made the pens as the Mother's Day gift craft with my classes.  They were always a big hit.

Merry Berry Month of May



  It is May and a great time to sample berries.  Strawberries and blueberries are in season and have been on sale for a week.  I pulled out my fruit  dip and decided to mix some up for a treat.  This dip works well with blueberries, apples, strawberries, cantaloupe, pineapple, grapes and honeydew melon. Always a crowd pleaser too.
Ingredients

    1 (8 ounce) package cream cheese, softened
    2 (7 ounce) jars marshmallow creme

Directions

    Using an electric mixer, beat the cream cheese until smooth. Add marshmallow creme and blend the mixture until smooth. Enjoy!
